I have a client who would like to remove "All Categories" from the Categories dropdown. OR move it to the bottom of the dropdown list.

Sorry, currently it always contains a "All Categories". The only thing I can suggest is to localize the phrase to an empty string, so users will not see it, but they can still select it though.
